Long Beans Stir Fry (Karamani Poriyal)
Long beans is a low calorie vegetable rich in vitamin A. This is a simple side dish made with karamani, coconut and green chilly. It goes well with curd rice. Now let’s jump to the recipe.
Ingredients:
·         Long beans-  200g
·         Coconut – 1tbsp
·         Green chilly- 2nos
·         Coriander leaves –as per taste
·         Salt- as per taste
For tempering
·         Oil
·         Mustard seeds
·         Urad dal

Instructions:
1.       Chop long beans into small pieces. Pressure cook it in cooker for about 4 mins. Instead you can also cook it in pan with little water and cover the lid. Sauté till the long beans is cooked. Add little water if required.
2.       In a mixie jar take coconut- 2 tbsp,  green chilly, coriander leaf and salt. Add water take it into smooth paste.

3.       Heat a tawa, add oil. Then add mustard seeds and urad dal for tempering.
4.       Now add ground paste and sauté till the raw smell goes.

5.       Now add cooked long beans and sauté for a 2-3 mins till the moisture is observed.
